5 Simple & Easy Vegan Recipes to Try

Over the weekend I had a really great conversation with a close friend of mine who happens to be vegan. She had made the switch just under 6 months ago and had so many wonderful things to say about it, but while I was listening to her talk about her new diet I couldn’t help but think that I’d be lost without my meats, dairy and eggs. I am never one to back away from a challenge, however, and so for one week I tried going vegan and was completely surprised by the experience.

I know what you’re thinking, “but Kelly, what is there even left to eat?!?” Surprisingly, quite a lot! And all of it is delicious and GOOD FOR YOU! So, I’ve made it easy for you and put together a list of my favorite vegan meals to try and slowly look to incorporate into your diet.

Let me first start with a little disclaimer that I am not a vegan. I do, however, try to enjoy vegan meals as often as I can. I would like to call myself a pseudo-vegan, mainly because there are so many levels and sub-levels to the lifestyle that I cannot for the life of me pinpoint which box I would fit into. I have tried to research as much as I can about veganism beyond it’s “trendiness” in order to better understand it’s benefits (and/or drawbacks).

What I have found is a plethora (hehe I love using that word) of healthy substitutes that I have been actively trying to incorporate into my daily meals.  Put simply, eating and more importantly cooking a vegan meal is an eye opening experience I feel everyone would benefit from. Not to mention, these meals are essentially guilt free!

First thing’s first, there are a few key ingredients used in vegan recipes that you may not (scratch that; definitely don’t) have stocked in your fridge already. First of which is a milk substitute. I prefer almond milk, but you can also get coconut or soy milk as well.
