Homemade 6 Ingredient Chocolate Pecan & Lemon Larabars

By now I assume everyone and their mother has tried a Lärabar before—you know, those tasty 4 ingredient protein bars that cost about $3.00 a pop? They are one of my favorite snacks, but spending that much money on something I inhale in 2 seconds was sort of blowing my mind. The other day I was going through my pantry for something to eat and noticed that I still had a full container of pitted dates and that little light bulb in my head went off. Pressed for time and fresh out of snacks to bring to work, I decided to experiment with making my own batch of Lärabars this morning, and boy was I pleased with the outcome!

If you’ve ever tried dates on your own you were probably a bit grossed out by their taste. Mix them with other ingredients, however, and they serve as the best glue for these and any other type of protein bars or bites. I made two different kinds in this batch, one lemon and the other chocolate pecan. The lemon bars are fresh and sweet, not too citrus-y and just the right amount of flavor. The chocolate pecan might be the most dangerous snack I’ve ever made. Seriously, I think the entire container might magically disappear before the end of today, they are that good.

6 Ingredient Chocolate Pecan Larabars

  • Servings: 6-8

Ingredients:

1/2 cup Chopped Pecans

1/2 cup Chopped Walnuts

1 cup Dried/Pitted Dates

1 tsp Lemon Zest

1 tbsp Lemon Juice

1 tsp Salt

Directions:

  1. Place pecans and walnuts in a medium food processor, blending until they form a powder.
  2. Add dates, lemon zest and lemon juice, pulsing the food processor until they form a paste. Add a pinch of salt to taste, and remove from the food processor with a spoon or spatula.
  3. Line a 8″ x 8″ pan with parchment paper and place the mixture into the pan, pressing and flattening into the corners evenly. This recipe should fill half of the pan, so leave room for a second batch or double this recipe to fill the entire pan if need be.
  4. Chill in the freezer for 30 minutes before transferring to the refrigerator. Slice into bars, and store in the refrigerator to keep fresh!

6 Ingredient Lemon Larabars

  • Servings: 6-8

Ingredients:

1/2 cup Chopped Pecans

1 cup Dried/Pitted Dates

4 tbsp Chia Seeds

3 tbsp Semi-Sweet Chocolate Chips

1 tbsp Vanilla Extract

1 tsp Pure Maple Syrup

Directions:

  1. In a medium sized food processor, combine pecans, dates, and chia seeds. Blend until they start to form a paste.
  2. Add in chocolate chips and vanilla extract. Add maple syrup as you blend.
  3. Remove from food processor and press into 8″ x 8″ pan, being sure to spread evenly.
  4. Chill in freezer for 30 minutes and then slice into bars. To keep fresh store bars in the refrigerator.

These Larabars taste just as good if not better than the original packaged ones, and as with anything you make from scratch, you can rest assured you’re getting fresh and clean ingredients that are good tasting and good for you!
