Let’s be honest here, who doesn’t love a good cookie? I’m always looking for ways to reinvent my favorite sweet treats and desserts into easy and better-for-you alternatives, and these almond cookies are the perfect example! They meet all of the typical criteria: refined sugar free, dairy and egg free, and even gluten free. And the best part? They still taste amazing.

My favorite aspect of this almond cookie recipe is just how quick and easy it is to make. Combine all of the ingredients in one bowl, mix with a spoon, roll into balls and bake for 10 minutes. That’s it!

These almond cookies require just six ingredients for the dough, and you can include any extra toppings you’d like. For this batch I added extra almond slivers and chunks of gooey dark chocolate. They are also great with coconut flakes, cacao nibs, or rolled oats!

Insanely Easy 10 Minute Almond Cookies

  • Servings: Roughly 12

Ingredients:

  1. 2 cups almond flour
  2. 6 tbsp agave nectar (or maple syrup, or honey)
  3. 4 tsp coconut oil, melted
  4. 2 tsp pure vanilla extract
  5. 1/2 tsp baking soda
  6. 1/4 tsp pink himalayan salt
  7. (optional) slivered almonds
  8. (optional) dark chocolate chunks

Directions:

  • Preheat the oven to 350F. Prepare a baking sheet with parchment paper and set aside.
  • In a medium size bowl, combine all ingredients except extras. Use a spoon to fold into a dough. Add any extras and combine with your hands.
  • Roll the dough into medium sized balls and flatted on the baking sheet with your palm. This recipe should yield 12 medium sized cookies.
  • Bake for 10 minutes. Remove, let cool for 5 minutes, and enjoy!

I’ve found that 10 minutes if the perfect amount of time to get that gooey inside and crispy outside for these almond cookies. The batter itself is very forgiving, so no matter if I use agave, maple syrup or honey as my sweetener they come out the same! These also store great in the refrigerator for up to a week in an air tight container. I have a feeling they will be gone long before then though.
